Stuffed Potatoes

Stuffed potatoes are great to have as an accompaniment at dinner or on their own as a light meal. Simply scoop out the flesh of a cooked potato, stuff with any filling you like, and bake in the oven for 15-20 minutes. Potato heaven!


Ingredients

• Potatoes 4 medium
• Paneer crumbled 1/2 cup

• Green chillies,chopped 2
• Salt to taste
• Chaat masala 1/2 teaspoon
• red chilli powder 3/4 teaspoon
• Roasted cumin powder 1/2 teaspoon
• Ginger,chopped 1/2 inch piece
• Fresh coriander leaves,chopped 1 tablespoon
• Processed cheese,grated 4 tablespoons
• Oil 1 tablespoon

Method

1] Brush the potatoes with oil.
2] Wrap in an aluminium foil and bake in a hot oven at 200 degree C (400 degree F) till tender (about 30 minutes)
3] Cool and split horizontally.
4] Scoop the potato halves a little so that a slight depression is formed for the filling.
5] Reserve the scooped out portions

Method for filling
1] Take paneer in a bowl. Add green chillies, salt, 1/4 teaspoon chaat masala, 1/4 teaspoon red chilli powder, quarter teaspoon roasted cumin power, ginger and coriander leaves and mix well.
2] Add two tablespoons grated cheese and mix well.

How to proceed

1] Stuff the potatoes with the paneer mixture. Place the scooped out potato discs over the stuffing.
2] Arrange the potatoes on a baking dish. Drizzle oil over the potatoes, sprinkle the remaining red chilli powder, chaat masala and roasted cumin powder and the remaining cheese.
3] Bake in the preheated oven for fifteen minutes. Serve hot.
