Instant Rava Dosa

Ingredient
1]Semolina (Sooji or rava) – ¾ cup, use coarse variety
2] Rice flour – ¾ cup

3] Water – 4 cups
4] Salt – to taste
5 ] Oil – 3 teaspoons
6] Ginger paste – 1 teaspoon
7] Green chilies – 4, chopped finely
8] Cumin seeds – ½ teaspoon
9] Curry leaves - 3-4

Method
1] Take semolina and rice flour in a large bowl and also add salt in it. Mix well.
2] Add 1 cup of water to semolina mixture. By adding little water at a time, it avoids forming lump while making batter. Mix well.
3] Add another 1 cup of water and mix. And so on. Make very very thin dosa batter. batter should be very thin like buttermilk.
4] Now make tempering. Heat the oil in pan on medium heat. Once hot add cumin seed, ginger paste, green chilies. Sauté for 30 seconds. Switch of the stove and then add crushed curry leaves.
5] Immediately add tempering to dosa batter. Mix well.
6] Cover it and let batter rest for at least 30 minutes. Longer rest will not harm.
7] When you are ready to make dosa, heat cast iron skillet on medium heat. I have used non-stick pan. If you have cast iron pan then I recommend using it. Sprinkle some oil on the pan.
8] Once hot, stir the dosa batter first and take ladle full of batter and spread it in a pan.
9] Make thin layer. It’s very easy. Just pour batter on tava then swirl the tava make it even thin layer. There are some spots without batter, add little batter here and there with ladle.
10] Let it cook on bottom side. It might take 2-3 minutes. You will see some browning in bottom and it will leave the sides of the pan. And you will get to know that bottom side is done.
11] Flip it and let it cook on other side. It will take lesser time than first side. If using cast iron, you might now need to slip and cook. I have used non-stick, so I cooked other side as well.
12] Serve immediately with coconut chutny or ketchup.
13] Repeat the same process to make other dosa. But always stir the batter first and spread on dosa pan. Because rava will settle down at the bottom of the bowl.
