Quick Poha (Flattened Rice)

Ingredients:
2 cups Poha (Beaten Rice)
1 chopped Onions
2 Green Chillies
1/2 cup boiled, peeled, cubed potato or frozen green peas. Both are optional.
1/4 tsp Mustard Seeds
1 sprig Curry leaves
1 tbsp peanuts
2 tbsp Oil
1/2 tsp Turmeric powderv 1/2 tsp sugar
1 tsp Lemon juice
1 tbsp Corainder leaves
Salt to taste

Method
1. Place the poha in a colander and wash it under cold water. Set aside to drain. Do this just before cooking – the poha shouldn’t sit for more than 10 minutes (or it will get mushy).
2.Add some salt , suger, keep aside.
3.Peel and cut the potatoes into small cubes, chop the onions, chillies, corainder leaves.
4.Heat oil and put mustard seeds, peanuts, curry leaves and fry until they crackle.
5.Add potatoes , saute for few minutes, then add chopped onions, chillies and turmeric powder.
6.Cook till they are done. Add the poha, corainder leaves and stir.
7.Keep it on slow flame for 5- 7 minutes.
8.Let it cool for sometime and add then lemon juice.
